Start with a protein-enriched dough:
2 cups whole wheat flour
1/2 cup protein powder (vanilla or unflavored)
1 tbsp instant coffee powder
1/2 cup unsweetened almond milk
1/4 cup melted butter
1 tbsp honey
1 packet active dry yeast
Preparation
Instructions:
In a small bowl, mix warm almond milk, honey, and yeast. Let it sit for 5-10 minutes until foamy.
In a large bowl, combine flour, protein powder, coffee powder, and salt.
Add the yeast mixture and melted butter to the dry ingredients and knead into a soft dough.
Cover and let the dough rise for 1-2 hours until doubled in size.
Roll out the dough, fold it into layers, and chill for 30 minutes.
Roll and cut into croissant shapes, then place on a baking tray.
Bake at 375°F (190°C) for 15-20 minutes until golden brown.
