This soft and fluffy vanilla cake is enhanced with coffee for a unique flavor twist.

Ingredients

Ingredients:

  • 1 1/2 cups almond flour

  • 2 scoops vanilla protein powder

  • 1/2 cup brewed coffee

  • 1/4 cup melted coconut oil

  • 1/2 cup Greek yogurt

  • 2 eggs

  • 1/2 cup honey or natural sweetener

  • 1 tsp vanilla extract

  • 1 tsp baking powder


Preparation

Instructions:


  1. In a bowl, mix almond flour, protein powder, and baking powder.

  2. In another bowl, whisk brewed coffee, coconut oil, Greek yogurt, eggs, honey, and vanilla extract.

  3. Gradually combine wet and dry ingredients, mixing until smooth.

  4. Pour batter into the cake pan

  5. Preheat oven to 350Ā°F (175Ā°C) and grease a cake pan.

  6. Bake for 25 minutes or until a toothpick comes out clean.
